Distilled in the US state of Oregon at the House Spirits distillery, Aviation Gin is the result of a collaboration between a bartender and a distiller. Produced by infusing several plants and spices: juniper, cardamom, lavender, hemidesmus indicus (Indian sarsaparilla), coriander, aniseed and orange zest in neutral grain alcohol for 48 hours, the gin is distilled in a steel still. It is then reduced to 42 degrees with pure water and left to rest for a few days before being bottled. Aviation Gin is a New Western Dry Gin, a style of gin that seeks to showcase botanicals other than the traditional juniper, and to create a rounder, more balanced taste than some of the better-known styles. Ideal in classic citrus cocktails, Aviation Gin elegantly expresses its unique notes of lavender, cardamom, anise and Indian sarsaparilla.
