North of Port-au-Prince, near Saint-Michel de l'Attalaye, Michel Sajous has built a distillery on the site of his family's former establishment. He naturally grows several varieties of sugar cane, including 'cristalline', on 30 hectares. He makes his clairin exclusively from freshly pressed cane juice. The result is a clairin with fine aromas, lively and powerful citrus notes and a vegetal finish.
