Entirely artisanal and produced without electricity, Devoción follows a centuries-old creation process passed down from generation to generation, revealing the full richness and complexity of agave aromas.
Respecting Mexican heritage and biodiversity, this invaluable knowledge imparts to Devoción its unique character: balanced, fresh, and elegant.
Produced in the heart of Mexico, in the valleys of Oaxaca, Devoción is more than just a mezcal. It is a showcase of exceptional craftsmanship.
_________
Devoción is an Artisanal Mezcal crafted at an altitude of 1700 meters, in the region of Oaxaca, at the heart of the Sierra. All sourced from the same field, the agaves are carefully cooked for 5 to 6 days in a traditional underground oven, using scorching volcanic stones as a heat source.
Following this, the cooked agaves are gently crushed with a Tahona wheel, drawn by a horse. The fibers of the cooked agaves ferment in open-air oak vats for 11 days. Only spring water is added to the mash to facilitate fermentation.
Finally, the double distillation takes place in traditional 300L copper stills with a total duration of 16 hours.
