Aging Edradour in a cask that once held one of the world's most distinctive rums was a challenge. Andrew Symington did it brilliantly: his single malt, aged in a cask from Hampden, a Jamaican distillery known for its powerful high esters, emerged enhanced by this confrontation marked by excellence. Representing the beauty of a distillate resplendent in its youth, the tasting is divided into two distinct but oh-so-complex and smooth phases. First, an olfactory sequence that generously lets the rum take the lead. Then, a taste sequence during which the malted barley gradually and inexorably takes the upper hand.
