Florentis Tuscan Malt Whisky Vin Santo is part of the extraordinary series of whiskies that the Chioccioli Altadonna family from Winestillery has begun to produce. The process includes a spontaneous six-day fermentation, the use of a hybrid copper still of the "Frilli" type, and a single, discontinuous distillation. The whisky is then aged in Tuscan oak barrels that previously contained Vinsanto. Made with Italian barley, rye, and wheat, and enriched with water from the Sorgenti del Fiora, this whisky is produced in a climate with maximum temperatures of 27°C and minimum temperatures of 14°C, with humidity consistently around 50%.
