Juniper, coriander, angelica and many other wild Irish plants are harvested around the distillery.
Distilled in 250L batches.
Distillation times are decided on a case-by-case basis according to the tasting of each batch.
Fresh botanicals are harvested each season to make different gins, which are then blended to create a single product.
