In the 19th century, at the height of sugar production, each of the approximately 200 plantations in Guyana had its own still. The rums produced were notably used to supply the daily ration for Royal Navy sailors. Today, the country’s only operating distillery, Demerara Distillers Ltd, preserves legendary stills inherited from iconic plantations: Versailles, Uitvlugt, Port Mourant, Enmore, and Diamond.
