Dragon Ume is a premium umeshu made with Gyokuei plums from the renowned Ayabeyama plum grove (home to over 20,000 trees). The plums are macerated in shōchū for at least 2 to 3 years, often longer depending on the batch, then blended with a junmai sake aged over 5 years, adding depth and complexity.
Unlike standard umeshu typically produced in under a year, Dragon Ume follows a slow, artisanal process. Using local rice and plums, it embodies a new specialty that celebrates the rich terroir of Tatsuno.
