Lagg Single Malt Small Batch Manzanilla
Finish is the first-ever Small Batch from Lagg
Distillery to be released worldwide with a
Manzanilla finish.
Initially matured in first and second fill Bourbon
Barrels, it was then finished for over a year in
ex-Manzanilla Sherry casks sourced from the
coastal town of Sanlúcar de Barrameda in the
Jerez region of Spain. We have chosen to bottle
it at a higher strength of 57.6% Vol, without chill
filtration or added colouring.
For this Small Batch Edition, we used Concerto
malted barley and water from our own borehole.
The malt is peated to 50ppm in the kiln, then
crushed and agitated in our mash tun to create a
cloudy wort, delivering a more oily, robust flavour.
Our selected yeast and fermentation help develop
the full-bodied character we aim for. The spirit is
then distilled twice at approximately 11 litres per
minute in our handmade copper pot stills before
we make our careful cask selection.
Manzanilla is a rare, highly prized style of Sherry
characterised by its bright, maritime freshness
and delicate complexity. Unlike most other
Sherry styles, Manzanilla ages under a layer of
very robust flor for its entire period of maturation.
This thick flor is encouraged by the cooler, humid
and salty seaside climate and its presence gives
the Sherry subtle saline notes, light nuttiness, and
a clean, crisp profile. When used to finish whisky,
these casks impart the same refined, coastal
influence that beautifully balances the heavily
peated Lagg spirit, adding layers of freshness,
delicate fruit, and nuanced Sherry character
