Ideal as an aperitif or with dessert, this sweet-and-sour sake gets its rosy-red color from the pigments (anthocyanins) in an ancient variety of purple rice, Asamurasaki. The producer uses flower yeast and white koji, giving it its unique character. Its sweetness and color make it a great match for sea bass. On the palate: a slightly sweet, demi-sec-like taste, with notes of redcurrant and flower petals.
