    Maison Takeno, based in Kyotango in Kyoto prefecture, was formed by the association of four sakaguras (sake houses) closed during the Second World War, and reopened in 1947, reviving a family tradition dating back to 1864. Now run by Yoshiki Yukimachi, it grows ancient rices endemic to the region: Kamenoo, Yamada Nishiki, Iwai and Asahi. Made from the Yamada Nishiki variety, which has a 50% polish rate, this version is impressively generous and fruity. Its aromatic and flavour palette is criss-crossed with sequences whose deliciousness is equalled only by the freshness of their expression.
