This sweet wine is made from Pedro Ximénez grapes, hand-picked and exposed to the sun for three days after the usual harvest. The grapes are then pressed and fermented in casks until they reach a natural alcohol content of 17%. The wine is then blended with a 1964 solera for oxidative ageing, the traditional ageing method used in the Jerez region. This solera gives the wine unique characteristics by blending it with older vintages. A small amount of dried grape juice is added each year, adding a subtle sweetness and leaving around 45 grams of residual sugar per litre. Under optimum conditions, this wine can be kept and develop positively for over 50 years.
