Produced from the Matsuyama Mii rice variety, this vintage from the nihonshu Bijofu sake brand is sold in Japan as a simple junmai-shu. However, with its 60% polish (the percentage of each grain of rice that remains), it is in fact a junmai ginjo. Smooth and subtle, with moderate acidity, this is a well-balanced nihonshu sake that goes very well with many different dishes. Fresh, it is refreshing and marked by a nice acidity and a clean sensation. Warm, around 40 degrees, it gains in structure, richness and sparkle.
