Canerock is made from Jamaican rums distilled in pot and column stills at the Clarendon and Long Pond distilleries, with natural spices infused into the blend: Madagascar vanilla beans, Caribbean coconut flesh and a touch of local ginger. To achieve further complexity, Jamaican rums aged for several years are also added to the blend, which rests for several months in oak barrels, 15-20% of which are sherry casks, before being bottled.
