Christian Drouin Sr. carried out his first maturations in former Sherry casks. Since those early days, the Drouin house has developed a true expertise in Sherry cask aging, which imparts both round and structured tannins to the Calvados, along with notes of browned butter, rancio, and a subtle salinity on the palate.
This particular Calvados was matured for 54 months in a Pedro Ximénez cask.
