Einkorn also called "einkorn" is one of the oldest varieties discovered and cultivated by man. It is on the land of the Cazottes estate that our little spelled grows, following the principles of biodynamics. Once harvested, we send it to a malting plant which will treat the grains with the respect that is due to them. Once the malt has been obtained, it is the turn of the brewer to use his know-how. The result is an unfiltered craft beer. At this stage, we take control, we make the most of the work done and proceed to the distillation of the beer. Finally, we are witnessing the birth of this tasty brandy.
