This eau-de-vie is made from wild plums, small round blue plums with green flesh. Vieille Prune is a classic eau-de-vie, appreciated for its roundness, due to its storage in oak barrels for a year, which gives it an attractive amber color.
This eau-de-vie is made from wild plums fermented for several weeks. After pitting, the fruit purée is left to rest for a further 4 to 6 weeks to develop the fruit's aromas. After distillation, it is reduced in strength by adding water, then stored in oak barrels for a year, to reach 42°.
