Founded in 2004 by Michel Sajous, Chelo distillery continues a family tradition dating back over fifty years. Located in northern Haiti in Saint-Michel de l’Attalaye, it is surrounded by a 30-hectare estate where the non-hybridised Cristalline cane variety is cultivated. Fermented for five to eight days using indigenous yeasts, the clairin is distilled in a pot still heated by direct fire and fuelled with bagasse (the fibrous residue of crushed cane). With absolute freedom of expression, this version ventures into a strikingly original aromatic territory, where medicinal, pharmaceutical and spicy notes intermingle.
