    Clairin production in Haiti remains largely artisanal, carried out by more than 500 small rural distilleries known as guildives. Each producer and each terroir give rise to a unique style, revealing exceptional diversity. Created in 2012, the The Spirit of Haiti project aims to support these distilleries and introduce traditional clairin to international markets, in collaboration with several emblematic producers. The clairins are bottled at their natural strength, without dilution or filtration, in respect of their original identity. Following the white expressions, the project began exploring local ageing. After one year in cask, the “Ansyens” were born. Longer ageing, beyond three years, then led to the “Vieux” range, offering more mature versions of the same clairins and paying tribute to historic producers through dedicated bottlings. This Vieux Sajous is the result of the distillation of Cristalline sugarcane, grown on the beautiful Saint-Michel-de-l’Attalaye plateau. Aged for 8 years in an ex-Caroni cask under Haiti’s tropical climate, single cask #SA17CR-9 is the oldest expression ever released for Sajous, selected especially for the French market. It demonstrates the remarkable ability of Clairin to age with elegance and to express its unique character over time.
